A kitchen is a room or part of a room used for cooking food and food preparation in a dwelling or in a commercial establishment. In the Western world, a modern home kitchen is equipped with a stove, a sink with cold and hot operating drinking water, a refrigerator, kitchen and counters cabinets assemble matching to a modular design. Many households have a microwave oven, a dishwasher and other electric appliances. These kitchen areas are usually larger and equipped with bigger and much more heavy-duty equipment than a personal kitchen. For example, a large restaurant may have a huge walk-in refrigerator and a huge commercial dishwasher machine. Commercial kitchens are usually (in developed countries) subject to public health laws. They may be inspected periodically by public-health representatives, and pressured to close if indeed they do not meet hygienic requirements mandated for legal reasons. The advancement of the kitchen is from the invention of the cooking range or stove and the introduction of water infrastructure with the capacity of supplying running water to private homes. Food was prepared over an open fire. Technical advances in heating up food in the 18th and 19th hundreds of years changed the structures of the kitchen. Before the development of modern pipes, water was helped bring from an outdoor source such as wells, pumps or springs
