A kitchen is an area or part of a room used for cooking food and food preparation in a dwelling or in a commercial establishment. Commercial kitchens are generally (in developed countries) at the mercy of public health laws. They are really inspected regularly by public-health representatives, and compelled to close if they do not meet hygienic requirements mandated by law. The advancement of the kitchen is linked to the technology of the food preparation range or stove and the development of water infrastructure with the capacity of supplying running water to private homes. Food was prepared over an wide open fire. Technical advances in warming food in the 18th and 19th decades changed the architecture of the kitchen. Before the arrival of modern pipes, water was brought from an outdoor source such as wells, springs or pumps
