A kitchen is a room or part of a room used for cooking food and food preparation in a dwelling or in a commercial establishment. In the Western world, a modern residential kitchen is typically equipped with a range, a sink with cold and hot operating normal water, a refrigerator, counters and kitchen units arranged matching to a modular design. Many households have a microwave oven, a dishwasher and other electric appliances. The primary function of a kitchen is serving as a spot for storing, baking and setting up food (and doing related responsibilities such as dishwashing), but it can be used for dining also, laundry and entertaining. Commercial kitchens are found in restaurants, cafeterias, hotels, hospitals, workplace and educational facilities, military barracks, and similar organizations. These kitchens are generally outfitted and bigger with bigger and much more heavy-duty equipment when compared to a residential kitchen. For example, a large restaurant might have a huge walk-in refrigerator and a large commercial dishwasher machine. Commercial kitchens are usually (in developed countries) at the mercy of public health laws. These are inspected periodically by public-health representatives, and forced to close if they do not meet hygienic requirements mandated for legal reasons. The evolution of the kitchen is from the invention of the baking range or stove and the introduction of water infrastructure capable of supplying running drinking water to private homes. Food was cooked properly over an available fire. Technical advances in warming food in the 18th and 19th hundreds of years changed the architecture of the kitchen. Before the arrival of modern pipes, drinking water was helped bring from an outdoor source such as wells, springs or pumps
